Beef and Tomato Bake Recipe
1 1/2 pounds ground beef
2 teaspoons salt
1 teaspoon pepper
3 tablespoons any fat
2 medium onions, peeled and sliced
6 medium potatoes, peeled and sliced
4 cups canned tomatoes, undrained
Heat fat in frying pan. Mix beef with pepper and 1 teaspoon of the salt, shape into 6 to 8 cakes and brown in hot fat. Remove cakes and place in baking dish which has a lid, pouring over them all the fat remaining in frying pan. Make a layer of the sliced potatoes and onions over top of meat. Add remaining 1 teaspoon of salt to the tomatoes and pour over all. Cover and bake in 350 oven for about 11/2 hours. Un-cover the last 30 minutes of baking. Serves 6 to 8.
