Baked Stuffed Heart Recipe
1 large beef heart
8 cups cold water
1 cup vinegar
1 teaspoon salt
2 cups Sausage Stuffing
1/2 cup water
Soak heart for 1 hour or longer in the cold water, to which the vinegar has been added. Drain and cut away fat and tubes. If the heart is large, parboil for 1 hour in fresh water to which the 1 teaspoon of salt has been added. Remove and drain well. Stuff heart with Sausage Stuffing and sew together at top. Place in heavy baking pan which has a lid, add 1/2 cup fresh water. Cover and bake in 350 oven until heart is tender, about 2 to 3 hours. Serves 6.
Two veal or pork hearts may be used for the same yield. If the smaller hearts are used, parboiling may be omitted and the salt added to the I/2 cup of water in pan for baking.
