Custard Pie Recipe


4 eggs, beaten
1/2 cup sugar
1/4 teaspoon salt
3 cups hot milk
1 unbaked deep 9-inch pastry shell
Nutmeg

Combine eggs, sugar, salt, and milk. Pour into unbaked pastry shell. Sprinkle nutmeg over top.

Bake in a moderate oven (375F) about 50 minutes. To test for doneness, insert tip of silver knife
into custard halfway between center and edge. If pie is done, the knife will make a clean cut and
no custard will adhere. Cool before serving. Keep unserved portion in refrigerator. Yield: 6 to 8 servings.
