Coconut Squares Recipe


1 stick (1/2 cup) butter or margarine
1 cup sifted all-purpose flour
1 tablespoon brown sugar
2 eggs
1 1/2 cups brown sugar (packed)
1 teaspoon vanilla
1 cup flaked coconut
1/2 cup chopped nuts
1/2 teaspoon baking powder

Combine butter, flour, and 1 tablespoon brown sugar, and pack into a greased 8x8-inch pan. Bake in a moderate oven (350F) 15 minutes.
Break eggs into a mixing bowl. Beat slightly. Add remaining ingredients and mix to blend. Pour over baked layer.

Return to moderate oven and bake 30 minutes longer. Cool; cut into squares. Serve plain or top with ice cream or sweetened whipped cream. Yield: 9 servings.
