Special Fried Chicken Recipe


1 cup flour
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons paprika
10 pieces chicken (thighs, breasts, drumsticks)
Shortening or oil
1 stick (1/2 cup) butter, melted

Combine flour, salt, pepper, and paprika. Dip chicken pieces in flour mixture to coat thoroughly.

Heat enough shortening in a large ,skillet to make a half-inch layer. Place pieces of floured chicken in the hot shortening. Brown on both sides. As they finish browning place them in a shallow baking pan one layer deep. Brush with melted butter. Bake in a moderate oven (350F) 30 to 40 minutes or until tender. Brush with melted butter every 15 minutes. Serve hot or cold. Yield: 10 servings.
