Creamy Baked Peas Recipe


2 packages (10 ozs each) frozen peas
1 can (4 ozs) mushroom pieces, drained
1/2 stick (1/4 cup) butter or margarine
4 tablespoons (1/4 cup) flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika
1 can (1 lb) tiny whole onions, drained
1/2 cup shredded cheese food or Cheddar cheese

Cook peas according to directions on package, until barely tender. Drain.

Pan-fry mushrooms in butter in a skillet, about 1 minute. Add flour; stir to blend. Add milk gradually; cook and stir until thickened. Add salt, pepper, and paprika.

Place peas and onions in a 1 1/2-quart casserole. Add sauce. Top with cheese. Bake in a moderate oven (350°F) 30 minutes, or until bubbly. Serve hot. Yield: 8 servings.
